    Blueberry & Banana Cake Healthy Recipe For New Mums


    This delicious cake is so easy to prepare and is a great lunch box, or after school treat. The combination of rice malt syrup and orange juice give it a lovely sweet taste without having to use sugar.


    • 2 cups of gluten free self-raising flour
    • 4 eggs
    • 2 tablespoons of┬árice malt┬ásyrup
    • 2 tablespoons of olive oil
    • The juice of 1 large orange
    • 1 teaspoon of vanilla extract
    • 1/2 cup of shredded coconut
    • 1 punnet of raspberries



    • Preheat oven to 160 degrees Celsius
    • Combine the eggs, maple syrup, oil, vanilla and orange juice and stir
    • Add the coconut and flour and coconut and mix
    • Add the raspberries and lightly blend them through the mixture
    • Bake for 35 minutes
    • Remove, slice & sprinkle coconut over the top
