    Layered Blueberry and Peach Cake

    This cake tastes amazing and it is low in fat, sugar and preservative free.

    INGREDIENTS

    CAKE

    • 2 cups of plain flour
    • 1 teaspoon of baking powder
    • 1 teaspoon of vanilla essence
    • 1 whole egg
    • 1/2 cup of olive oil
    • 1 cup of soy milk

    FRUIT

    • 1 large tin of sliced peaches in natural juice
    • 1 punnet of blueberries

    CUSTARD

    • 2 tablespoons of cornflour
    • 1 teaspoon of olive oil
    • 1 1/2 cups of additional soy milk
    • 1 teaspoon of vanilla essence
    • 1/2 cup of rice malt syrup

    EXTRA

    • 1 teaspoon of icing sugar

    METHOD

    • Preheat the oven to 180 degrees
    • Combine the flour, first cup of soy milk, olive oil and egg to form a batter
    • Lay the batter in a flat baking dish and bake for 30 mins
    • While the cake is baking in a small pot combine the flour and extra olive oil to form a paste
    • Add the vanilla, soy milk and rice malt syrup and stir over a medium heat until it boils – remove
    • When the cake is ready, slice it into 3 circle shaped layers
    • Top each layer with custard and fruit
    • On the top layer pour all the peace juice and dust with a light sprinkle of icing sugar
