    This delicious cake is so easy to prepare and is a great lunch box, or after school treat.

    The combination of rice malt syrup and orange juice give it a lovely sweet taste without having to use sugar. The best part is that it contains loads of yummy blueberries that are delicious and filled with boosting vitamin C. You can also add raspberries to give the cake even more flavour. The combination of banana and berries makes the cake even more moist for fussy eaters to truly enjoy!

    The recipe ingredients notes the use of gluten-free flour but this is optional. You can use any type of self-raising flour that suits your family’s needs.


    • 2 cups of gluten free self-raising flour
    • 4 eggs
    • 2 tablespoons of┬árice malt┬ásyrup
    • 2 tablespoons of olive oil
    • The juice of 1 large orange
    • 1 teaspoon of vanilla extract
    • 1/2 cup of shredded coconut
    • 1 punnet of raspberries


    • Preheat oven to 160 degrees Celsius
    • Combine the eggs, maple syrup, oil, vanilla and orange juice and stir
    • Add the coconut and flour and coconut and mix
    • Add the raspberries and lightly blend them through the mixture
    • Bake for 35 minutes
    • Remove, slice & sprinkle coconut over the top
