Recipes for Health Living: Zucchini and Lentil Fritters


These zucchini and lentil fritters are a great way to sneakily give your children protein and vegetables. Topping them with melted cheese and a dollop of ketchup will add some additional flavour. You may like to add some avocado and tomato aswell.


  • 1 x 400g tin of brown lentils
  • 1 x 420g tin of corn kernels (no salt added)
  • 4 tablespoons of plain flour
  • 1 teaspoon of baking powder
  • Pinch of paprika
  • ½ teaspoon of vegetable stock
  • Pinch of parsley
  • Punnet of sweet cherry tomatoes
  • 1 avocado
  • 1 bunch of spinach leaves


  • Drain the juice from the lentils and place in a mixing bowl
  • Blend the corn kernels with the juice included and add this to the bowl
  • Add the spices, vegetable stock and baking powder and stir until well combined
  • Fry in shallow oil on both sides until brown
  • Remove and serve on top of a bed of spinach leaves and topped with avocado and tomato

For kids

Sprinkle cheese over the top and a dab of low sugar ketchup if they need a bit of additional flavour
